Milk Bread

Milk bread is an incredibly light, soft, and slightly sweat bread. It’s a very approachable bread for those that might be more used to grocery store loaves. Making great PB&Js, grilled cheese, and French toast. Go off the beaten path though and you won't be disappointed.

Asian varieties of milk bread is known by many names; Hokkaido Milk Bread, Shokupan, Korean Milk Bread, and more. But the thing that they have in common is using a tangzhong.

A tangzhong is a technique very similar to a roux made ahead of time with some of the milk and flour for the bread. This creates a bread that stays softer longer without having to resort to additives.

Milk bread is our only regular bread made with commercial yeast.
